Classic Italian Pastina Soup

Ingredients

  • 1 lb shredded rotisserie chicken
  • 10 to 12 cups of water
  • 3 ribs of celery, sliced thin
  • 2 yellow onions, diced
  • 3 large carrots, peeled, sliced thin or diced
  • 2 teaspoons freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 2 tablespoons chicken base (Better Than Bouillon)
  • 1 cup pastina or other tiny pasta
  • 1 tablespoon chopped parsley

Instructions

  • Chop celery, carrot, and onion. Place into bowl.
  • Measure out 2 cloves of minced garlic. Place into small bowl.
  • Measure out 1 tablespoon of kosher salt, 2 teaspoons of black pepper. Place into li'l dish.
  • Add olive oil to pot.
  • Add celery, onion, carrot, salt, pepper, and garlic to pot. Kinda saute until tender.
  • Add 10-12 cups of water, shredded chicken, and chicken base.
  • Bring to boil and reduce to simmer. Let simmer for 2 hours.
  • Add pasta and cook until pasta is tender.
  • Garnish with parsley and serve.
