Classic Italian Pastina Soup

Ingredients
- 1 lb shredded rotisserie chicken
- 10 to 12 cups of water
- 3 ribs of celery, sliced thin
- 2 yellow onions, diced
- 3 large carrots, peeled, sliced thin or diced
- 2 teaspoons freshly ground black pepper
- 2 tablespoons olive oil
- 2 cloves of garlic, minced
- 2 tablespoons chicken base (Better Than Bouillon)
- 1 cup pastina or other tiny pasta
- 1 tablespoon chopped parsley
Instructions
- Chop celery, carrot, and onion. Place into bowl.
- Measure out 2 cloves of minced garlic. Place into small bowl.
- Measure out 1 tablespoon of kosher salt, 2 teaspoons of black pepper. Place into li'l dish.
- Add olive oil to pot.
- Add celery, onion, carrot, salt, pepper, and garlic to pot. Kinda saute until tender.
- Add 10-12 cups of water, shredded chicken, and chicken base.
- Bring to boil and reduce to simmer. Let simmer for 2 hours.
- Add pasta and cook until pasta is tender.
- Garnish with parsley and serve.
