Classic Italian Pastina Soup

Ingredients

  • 1 lb shredded rotisserie chicken
  • 10 to 12 cups of water
  • 3 ribs of celery, sliced thin
  • 2 yellow onions, diced
  • 3 large carrots, peeled, sliced thin or diced
  • 1 tablespoons kosher salt
  • 2 teaspoons freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 tablespoon chicken base (Better Than Bouillon)
  • 1 cup pastina or other tiny pasta
  • 1 tablespoon chopped parsley

Instructions

  • Add olive oil to pan.
  • Add celery, onion, carrot, salt, pepper, and garlic to pan. Saute until tender.
  • Add sauteed vegetables to large pot, along with water, shredded chicken, and chicken base.
  • Bring to boil and reduce to simmer. Let simmer for 2 hours.
  • Add pasta and cook until pasta is tender.
  • Garnish with parsley and serve.
