Ingredients
- 2 tsp olive oil
- 1 lb ground chuck
- 1 large yellow onion, chopped
- 4 celery ribs, thinly sliced
- 3 garlic cloves, finely chopped
- 1 28 oz. can whole peeled plum tomatoes, drained
- 2 tsp dried oregano
- 8 cups chicken broth
- 1 12 oz. package refrigerated gnocchi
- 1 6 oz. package fresh spinach
- 3 tsp kosher salt
- 1/8 tsp black pepper
- grated parmesan cheese, for serving
Instructions
- Heat oil in large saucepan over high. Add beef, and cook, stirring occasionally until browned. ~8 minutes
- Add onion, celery, and garlic. Cook, stirring often until vegetables are tender. ~8 minutes
- Stir in tomatoes and oregano, breaking up tomatoes with wooden spoon.
- Stir in broth, and bring to a boil, then reduce heat to medium-low, and gently boil. ~8 minutes
- Add gnocchi and cook until just tender. ~3 minutes
- Remove from heat.
- Stir in spinach, salt, and pepper. ~2 minutes
- Sprinkle each serving with grated parmesan.
