Ingredients

  • 2 tsp olive oil
  • 1 lb ground chuck
  • 1 large yellow onion, chopped
  • 4 celery ribs, thinly sliced
  • 3 garlic cloves, finely chopped
  • 1 28 oz. can whole peeled plum tomatoes, drained
  • 2 tsp dried oregano
  • 8 cups chicken broth
  • 1 12 oz. package refrigerated gnocchi
  • 1 6 oz. package fresh spinach
  • 3 tsp kosher salt
  • 1/8 tsp black pepper
  • grated parmesan cheese, for serving

Instructions

  • Heat oil in large saucepan over high. Add beef, and cook, stirring occasionally until browned. ~8 minutes
  • Add onion, celery, and garlic. Cook, stirring often until vegetables are tender. ~8 minutes
  • Stir in tomatoes and oregano, breaking up tomatoes with wooden spoon.
  • Stir in broth, and bring to a boil, then reduce heat to medium-low, and gently boil. ~8 minutes
  • Add gnocchi and cook until just tender. ~3 minutes
  • Remove from heat.
  • Stir in spinach, salt, and pepper. ~2 minutes
  • Sprinkle each serving with grated parmesan.
