Ground beef vegetable soup with gnocchi

Ingredients
- 2 tsp of olive oil
- 1 pound of ground chuck
- 1 large yellow onion, chopped (about 3 cups)
- 4 celery ribs, thinly sliced (about 2 cups)
- 3 garlic cloves, finely chopped (about 4 tsp)
- 1 (28 oz) can of whole, peeled plum tomatoes, drained
- 2 tsp of dried oregano
- 8 cups of low-sodium chicken broth
- 1 (12 oz) package of gnocchi
- 1 (6 oz) package of fresh spinach
- 3 tsp of kosher salt
- 1/8 tsp of black pepper
- grated Parmesan cheese, for serving
Instructions
- Heat oil in a large saucepan over high heat. Add beef and coo, stirring occasionally, until browned. (~8 minutes)
- Add onion, celery, and garlic. Cook, stirring often, until vegetables are softened. (~8 minutes)
- Stir in tomatoes and oregano, breaking up tomatoes with wooden spoon.
- Stir in broth and bring to a boil.
- Reduce heat to medium-low, and gently boil until the vegetables are tender. (~8 minutes)
- Add gnocchi, and cook until just tender. (~3 minutes)
- Remove from heat. Stir in spinach, salt, and black pepper.
- Sprinkle each serving with grated Parmesan.
